How Many Types of Rice Are There?
There is no single number. Count the species actually farmed and the answer is 2. Count officially released varieties and it is around 5,000. Count the samples safeguarded in the world’s rice genebank and it is 132,000+. Ask how many could exist and IRRI’s own scientists say up to 500,000. Same question, six honest answers — and which one is right depends entirely on what you decide to count.
Only two plants on Earth are farmed as rice: Asian Oryza sativa and African Oryza glaberrima. Everything else on this ladder is a subdivision of the first one.
Add the 24 wild Oryza species and the genus holds about 26 in total — but those are relatives, not crops.
Every number here is real and sourced. There is no single right answer — that is the point.
So what are the actual types?
Underneath the head-spinning counting question, most people just want the shortlist you meet in a shop or on a menu. Rice gets sorted three ways at once — by grain length (long, medium, short), by colour and milling (white, brown, red, black, parboiled), and by stickiness. Here are the ones worth knowing, and the single trait that explains most of the differences between them.
Is there a central register of rice?
Yes — several, and they don’t agree, which is exactly why the count is slippery. The big one is the International Rice Genebank at IRRI in Los Baños, the Philippines. It began collecting in 1962, was formalised as the T.T. Chang Genetic Resources Center in 1977, and now holds more than 132,000 accessions — each a distinct sample stored at −20 °C for the long term. Roughly 37% are traditional landraces; about 124,000 are Asian Oryza sativa and some 1,600 are African Oryza glaberrima.
Alongside it sit registers that count different things. Genesys is the global gateway through which any genebank’s accessions can be searched and ordered. The USDA’s GRIN system holds the American collection. IRRI’s own IRIS logs around 5,000 officially released cultivars. And most rice-growing nations keep their own list of varieties cleared for farmers. No one has ever merged them all — partly because the same genetic line is released in several countries under several names, so a true global tally would need to strip out the duplicates first.
Bred, hybridised, or engineered in the lab?
When people ask about rice “modified in the factory,” they’re usually blurring three very different things:
1. Selective breeding. The oldest and largest source of variety — farmers and breeders crossing plants and keeping the best. The Green Revolution ran on it: IRRI’s semi-dwarf IR8, released in 1966, roughly doubled yields and is often credited with averting famine across Asia. No foreign genes involved — just clever crossing.
2. Hybrid rice. A one-generation cross between two carefully chosen parent lines for a burst of vigour. China’s Yuan Longping pioneered commercial hybrid rice in the 1970s; it now covers a large share of China’s crop. Still conventional — but farmers must buy fresh seed each season, since the vigour doesn’t breed true.
3. Genetic modification and gene editing. Here a gene is inserted or edited directly. This is the true “lab” category: Golden Rice (beta-carotene from maize and a soil bacterium), Bt rice (insect resistance), herbicide-tolerant lines, and a fast-growing wave of CRISPR-edited varieties for disease resistance and climate tolerance. Almost none are yet grown commercially at scale — which surprises people who assume most rice is already GM. It isn’t.
Golden Rice: the type that ended up in court
The most famous engineered rice is Golden Rice, created in 1999 by Ingo Potrykus and Peter Beyer to make beta-carotene — the yellow pigment the body turns into vitamin A. The target is real: vitamin A deficiency is a leading cause of childhood blindness, and affects roughly one in five children in the poorest Filipino communities.
Regulators in Australia, New Zealand, Canada and the US judged it as safe to eat as ordinary rice (2017–2019). In July 2021 the Philippines became the first country to approve it for commercial planting, and by October 2022 farmers had harvested about 67 tonnes across 17 sites. Then the tide turned: in April 2024 a Philippine appeals court revoked the permit — a decision it upheld in August 2024 — citing the precautionary principle and the lack of scientific consensus. PhilRice petitioned the Supreme Court in November 2024 to reverse it.
As of the latest available information the ban stands and the appeal is pending — so Golden Rice is a variety that exists, is approved as safe in several countries, yet currently cannot be grown commercially where it was made. (A live legal situation — worth checking for updates.)
Chemicals, toxins and the good stuff
Rice has an unusual chemistry problem: it takes up more inorganic arsenic than almost any other grain. The reason is the flooded paddy — waterlogged soil chemically frees arsenic (from natural deposits and decades of legacy pesticides), and the plant pulls it up. The arsenic then settles in the grain’s outer bran layer, which is why brown rice runs higher than white, and why a 2025 Consumer Reports round found detectable arsenic in every one of 52 products tested — along with traces of cadmium, lead and mercury.
It is not a reason to panic, and it is partly in your hands: basmati and jasmine test lowest, rotating in other grains helps, and cooking rice in plenty of water you then drain removes a good share. Try it on the types below.
The flip side is that rice’s colour is chemistry too — and mostly good chemistry. Black and purple rice owe their colour to anthocyanins, the same antioxidant pigments as blueberries. Red rice carries proanthocyanidins. Brown rice keeps the bran’s γ-oryzanol, vitamin-E tocotrienols, fibre and B-vitamins — the very layer that also holds the arsenic, which is the honest trade-off nobody advertises. And Golden Rice is simply an engineered version of the same idea: colour standing in for a nutrient.
Land, water and days: what a type costs
A variety isn’t just a flavour — it’s a resource bill. The register doesn’t track a tidy “litres and days” figure per named variety, but it does sort rice by the two levers that decide the cost: how long it takes to mature and how it’s watered. Short-season lines finish in 90–110 days; long-season ones take 150–180. And rice is the thirstiest staple on the planet — commonly cited at 3,000–5,000 litres of water per kilogram, because a flooded field loses water every hour to evaporation and seepage. Rice is essential to which industries?
Far more than dinner. Rice feeds half the world as food, but the plant is also a quiet industrial feedstock — and almost nothing is wasted. A single tonne of milled paddy throws off about 200 kg of husk and a layer of bran, and both have become raw materials:
Add paper from the straw, mushroom-growing substrate, and rice paper and noodles from the starch, and it’s clear why rice varieties are bred not only for taste but for bran oil content, husk silica, straw strength and starch chemistry.
So how many kinds of rice will there be in 2050?
The number is moving in two directions at once. At the bottom, diversity is bleeding out: India alone is thought to have lost some 300,000 traditional varieties as farmers switch to a handful of high-yielding lines. That’s why the genebank freezer matters — it’s an ark for varieties no field still grows.
At the top, new types are arriving faster than ever — not from slow crossing but from gene editing, aimed squarely at the pressures on this page: climate-resilient lines that need less water, low-arsenic lines, and biofortified grains that pack in iron, zinc or vitamin A. Golden Rice was the loud first draft of that idea; the courtroom fight around it is really a fight about who gets to decide what counts as an acceptable new variety.
Which loops back to where we started: “how many types of rice” was never a counting question. It’s a question about what we choose to keep, what we choose to build, and where — between 2 and half a million — we decide to draw the line.
